Zabuton Steak, also known as “Haneshita” in the Kansai region of Japan, is the outer side portion of a chuck eye roll. This portion is famous for the fine, evenly scattered marbling that allows the beef to melt in your mouth. Zabuton became one of the most popular items at premium yakiniku restaurants in recent years as rarer portions have been spotlighted. Some beef enthusiasts even call this part the “Otoro” of beef, referring to the rarest portion of tuna.
