Sweet Orange Roughy Taco

This Sweet Orange Roughy Taco recipe is super simple and so delicious. Your family will be delighted with these tasty tacos! You couldn't believe such a simple recipe could have a punch of flavor in every bite! This will be your go-to fish taco plate for Taco Tuesday!

    INGREDIENTS

    • 1 Large carrot
    • 1 Navel orange, halved
    • 1 Medium red onion, diced
    • 1 Large avocado, cubed
    • 4 T Cilantro, chopped
    • 1 Wixter Orange Roughy fillet
    • 1 Pack of tortillas, street taco size
    • Salt and pepper to taste

    INSTRUCTIONS
    STEP 1: Remove tortillas from the packaging, wrap them in foil, and place them in an oven at 200°F.
    STEP 2: Shred the carrot on the finest setting of a box grater. Place into a bowl and squeeze the juice from half an orange over the shredded carrot; toss gently, and set aside.
    STEP 3: Slice the rind off the remaining half an orange, then cut the orange into bite-sized cubes. Toss gently with the red onions and set aside in a bowl.
    STEP 4: Season the orange roughy with salt and pepper. Cook over medium heat for about 4 minutes per side, or until the fish flakes easily.
    STEP 5: Place fish into a bowl and gently separate into flakes.
    STEP 6: Preassemble the tacos or serve family style by placing the bowls on a table with the avocado, cilantro, carrot, red onion-orange mixture, fish, and tacos in their dishes. Enjoy!
